What's the correct way to add sponsors, then select sponsor when activating content?

Hey,

We're ready to set up sponsors like affiliate programs, adsense, etc on our site. Can someone teach us, or link us to, the correct way to add a sponsor and it's ads?

We use an ad above content, under the video, and below content, so three ads for each piece of content.

Let's say we upload a fight video, we'd give that the NSFW sponsor/ad set, or an animal video which gets the adsense sponsor/ad set.

Is this something we'd do per category or for each content?

Looking for the best way to do this and some directions on how to do it.
